NEW MIAMI — If Chris Shiflett knows anything, it’s that a down economy is no reason to stop chasing your pie in the sky dream of opening a pizza place.

The Somerville resident and his wife, Nicole, recently opened their own carryout, Nicole’s Pizza and Subs, at 2127 Hamilton-Eaton Road. The store is the culmination of the couple’s dream to open their own business and Shiflett’s desire to make a living out of his love of cooking.

“I’ve been tinkering with doughs and sauces for years. I’m definitely the cook in the family,” he said while smiling at his wife, who said she doesn’t mind her name being used for the business.

For years, Shiflett said he has been saving money to open his own place. When things began getting slow at his truck driving job, he knew this was his opportunity to try something new.

“He has had it in his mind for almost five years,” said his mother-in-law, Peggy Hibbard.

Shiflett makes the dough and sauces himself, and offers a variety of toppings from which customers can choose. He likes the homemade flavor and admits he is a “meaty kind of guy” who enjoys piling on the pepperoni, bacon and sausage.

Nicole’s also offers a variety of appetizers and sandwiches, all of which are available for delivery after 3 p.m. to customers in New Miami, St. Clair Twp., Trenton, Seven Mile, Wayne Twp. and the West Side of Hamilton.

A customer favorite has been the “Fat Daddy’s Cardiac Attack The Heart Stopper,” a sandwich Shiflett’s father-in-law, Jeff “Fat Daddy” Chamberlin, invented. The burger includes three cheeseburger patties, three layers of bacon, fries, onion rings, onion, pickles, mayonnaise and ketchup on a bun.

“I told him there was no way we were going to sell this big, gobby sandwich,” Shiflett said. “But we sold more than 100 the first week.”
