Honey roasted pears
Makes 4 to 8 servings
1 teaspoon vanilla extract
4 ripe-but-firm pears, peeled, cored and halved
3 tablespoons unsalted butter, cut into 1/4 inch dice
Preheat oven to 450 degrees.
Combine the honey and vanilla, and set aside. Place the pears cut-side-up in a large heavy skillet or enamel-lined cast-iron gratin dish. Drizzle with a little of the vanilla honey and turn cut-side-down. Drizzle with remaining vanilla honey and dot with butter.
On the stove, set the pan over high heat for 2 minutes, until the honey butter begins to sizzle. Place in the oven and roast for 12 to 15 minutes.

Call this the cheese course or call it the fruit course. Or call it dessert. It is the classic pairing of pears with blue cheese and nuts, served warm. Once the pears are peeled, preparation is utter simplicity. If you can't stand last-minute preparation, peel and roast the pears ahead of time and let sit on the counter. Then top with the cheese and nuts, and put in the oven for about 5 minutes, until the cheese melts and the pears are warm.
