Happy Earth Day!

Today is the 38th annual celebration of the planet we call home, and a day to step back and think about things we can do to preserve and restore our natural resources…

So that’s the official line on Earth Day, but I want to know: what do YOU think about Earth Day?

Is it a time to reflect on accomplishments?

A time to call for more action?

Or something in-between?

Results!

Here’s what I had for dinner last night:

Meatloaf, mashed potatoes and a salad of tomatoes, Swiss chard and lettuce.

With the exception of a few things in the meatloaf and a few leaves of lettuce, everything came from my porch or gardens within walking distance of my house.

Over the last month I have truly gained an appreciation for the extra something that homegrown produce adds to a meal. Yes, part of it’s freshness; you can’t get much fresher than picking it, washing it and throwing it on the plate in the span of 10 minutes.

But there’s a certain satisfaction that comes from being self sufficient, even if it’s only for a small part of one meal. My dabbling into growing my own food hasn’t put much on the plate this summer, but it’s made me a lot more confident - next year, there’ll be a few more vegetables on the porch, and hopefully a few more truly homemade meals on the plate.

It’s nice to have something like that to look forward to.
