RACE RECIPE: Garden Relish
(As the Jeg’s Racing Team heads for Seattle, team chef Nicky Morse sends this summer recipe along. — JB)
Garden Relish (Makes approximately 1.25 cups)
Anyone who has a garden realizes that there is no stopping the harvest season once it starts. Cucumbers seem to come by the dozen and the tomatoes never end. If you need an idea for some of those veggies a little different than just slicing them and adding a little salt, look no further. This is an easy recipe that is great with grilled fish, or roasted poultry. I am sure you will come up with your own ideas once you give it a try.
Ingredients:
2 Tablespoons Light Brown Sugar
2 Tablespoons Water
½ Teaspoon Red Pepper Flakes
4 Teaspoons Red Wine Vinegar
½ Cup Bell Pepper (Small Dice) (I use a mix of colored peppers)
¼ Cup Red Onion (Small Dice)
¼ Cup Tomato (Seeded/ Small Dice)
½ Cup Cucumber (Skinned/ Seeded/ Small Dice)
To Taste Salt
To Taste Pepper
Procedure:
Boil the sugar, pepper flakes, and water together.
Remove from the heat and add vinegar; chill.
Combine with the remaining ingredients.
Chill at least 1 hour.
Enjoy!

Stewart, Kahne to race Kings Royal weekend
The Kings Royal at Eldora Speedway is one of the biggest winged-sprint car events in the country. It just added a little more star power.
Eldora track owner and NASCAR Sprint Cup points leader Tony Stewart and fellow Cup driver Kasey Kahne will compete against the National Racing Alliance (NRA) Sprint Invaders as an undercard to the $50,000-to-win Kings Royal on July 17-18 at the Darke County track.
“Any time I can get behind the wheel of a sprint car, I look back and appreciate my career,” said Stewart, an Indiana native who grew up running sprints in the Midwest. “When it comes to competition, I love to race and I love to win. Eldora will be no different.”
Added Kahne, “It doesn’t matter where I’m racing or what type of car I’m in. If I’m behind the wheel, I’m racing for the trophy … and it would be special to win at Eldora.”
Stewart and Kahne also field teams for the Kings Royal. Donny Schatz and Kraig Kinser drive for Stewart; Joey Saldana and Craig Dollansky for Kahne.
